About the wine: The farms where the grapes come from have been previously selected with a grape tasting. Harvesting takes place when the grape has reached the optimum point of phenolic maturation. The harvest is carried out in baskets of about 20kg, which allows us in this case to select the grapes that show us the best visual quality; as it is going to be a limited game that is used for this wine. The alcoholic fermentation will take place in small stainless steel tanks, and once it is finished, the wine will be taken to new French and American oak barrels where it will undergo malolactic fermentation.
