Removing alcohol infers something has been lost, in this case however far more has been gained - bright fruit, crystal clear aromatics, and a satisfying palate – all at 7% alcohol - That’s worth raising a second glass to!
'The Bright Eyes White is a dual varietal wine however both are sourced from the same ridge behind Woodside in the Adelaide Hills. We have been working with fruit from this ridge for more than a decade now and the fruit grown here is always loaded with perfume. For reduced alcohol wines whites can be less of a challenge than reds as they lack the tannins, but there can be issues retaining aromatics. We have selected this very lifted fruit specifically to avoid this issue and made winemaking choices that highlight these aromatics, including moderate skin contact and long, cool fermentation in tank.' - Hugh Hamilton, McLaren Vale
Tasting notes: Slick with subtle strawberry, pink lady apple, and cherry. Notes of thyme and bay play savoury against sweet. A team of seamless featherlight flavours fixed together with a peach fuzz texture.
