PECORINO

Native to the regions of Le Marche and Abruzzo in Italy, the rather rare Pecorino grape variety is perfectly suited to the cool climate and high altitude of the inland areas of the Adriatic coast, and is best known for producing crisp white wines.

This exemplary Pecorino from Fox Creek was grown in the Adelaide Hills, demonstrating that this hardy, resistant grape clearly thrives in the cooler climate, compared to that of nearby McLaren Vale. Produced using cool alcoholic fermentation, partial malolactic fermentation and aged in old French oak.

Colour: Deep straw/lemon

Nose: Stone fruit, yellow apple, ripe pear, green herbs

Palate: Clean and crisp with a creamy texture, dry minerality and intense acidity

Country: Adelaide Hills, Australia

ABV: 12.5%

Food pairing: Perfect with the cheese of the same name or Manchego
