Nose: Perfumed lifted fresh oak integrates with nuances of brambly forest fruits and dark olive tapenade on the nose
Palate: The palate is dark and opulent, juicy dark fruit flavours of blood plums and blackcurrants, with persistent, mouthcoating tannins and balanced oak that lifts rather than overpowers the wine
Food Pairing: Slow braised steak and bacon pie with flaky butter puff pastry…all the best wines deserve bacon! And pastry!
About the wine: Each component used in the blending of the Boot Room creates a Shiraz that exemplifies certain characteristics of the Clare Valley. From Leasingham to just north of the Clare Valley township, we had access to parcels that defined the sub-regions of Clare and work harmoniously to create a full, rich and balanced Shiraz. Combined with careful oak selection with 20% New French Oak and 80% older French and American barrels, this Shiraz will continue to give for the next 8-10 years.
