HUGH HAMILTON EXOTICA SPARKLING SHIRAZ SAPERAVI

If you already know Hugh Hamilton’s Black Ops and Oddball, this is the next step — a similar Shiraz + Saperavi blend, but taken in a completely different direction. Brand new to us, and different to most Sparkling Shiraz, this one is all about vibrant fruit, lift and energy, with a bright, clean finish.

Hugh’s winemaking question was simple: “What if it had bubbles?” The answer is this — a sparkling red made with tank secondary fermentation (rather than bottle-fermented), which keeps the wine bright, punchy and fresh to the last blast of bubbles.

Serve it slightly chilled, put food on the table, and enjoy the chaos.

Blend: 70% Shiraz / 30% Saperavi
Food match: orange & honey glazed pork stir fry, or French onion and cabbage gratin
