This is one of Hugh Hamilton’s most brilliantly mischievous wines — a paradox in a bottle.
Jekyll & Hyde co-ferments Shiraz with Viognier, and instead of making the wine lighter, it somehow turns it darker, richer and more intense. The Viognier skins help build more stable colour and structure, and the whole thing ends up feeling more complex than either variety would on its own.
The style is lively and layered — taut tannins, bright energy, and a flavour profile that flips between savoury and sweet in the most addictive way. A proper “keep you guessing” red that’s brilliant with food.
